Cheap food ideas

I found some really good cheap recipes online when I searched and I made these things today.These potato pancakes are to die for, and really easy and cheap!

They would taste great with some kind of garlic/herb sauce I reckon, but I just ate them plain. I added a bit of shaved parmesan to mine to give it some extra flavour, and I used eschallots instead of parsley cos that was what I had. They tasted good though.Also I made this recipe as well, and froze some of it so hopefully it tastes good defrosted.... I tasted some of it, it is nice, some fresh herbs like rosemary or thyme would have made it even better.

I made it with the rice, I also added a bit of canned corn... the lemon pepper does make it nicer (yay to former flatmates leaving behind random food like lemon pepper), it could be a bit bland it needs something added to it, like some herbs. Even a bit of parsley would have spiced it up a bit I reckon. Basil could also have done the trick.But those two were really quite good, very easy to make, and very cheap.Another thing that is easy and cheap to make is mock Vietnamese pho soup. No where near as good as the real deal obviously, but if you live near an asian supermarket, buy some rice noodles, some pho powder/stock or if you can't find that just buy some beef or chicken stock, some bean sprouts, some herbs (basically whatever you like, I usually throw in some corriander, chop up some chili, adding a bit of lime can give it a nice zing, whatever it's up to you)... also I usually chuck in some broccoli or bok choy for good measure (green= healthy lol) and if you aren't really poor buy either beef or chicken (you only need a bit) to match whatever stock you have selected.Basically make up a soup with the stock... cook the rice noodles and put them in the bowl (you need a decent sized noodle bowl for this). Chop the meat in to very fine slices and you can cook it just by chucking it in the boiling soup broth... cook the veggies in the soup as well by boiling. Then chop up your herbs, chuck them in to the bowl, chuck in some bean sprouts (this is all to personal taste) and then take the meat and veggies out of the soup, put them in the bowl, and pour over the soup/broth. Yum.... not as good as the real deal, but reasonably cheap, filling and warming especially in winter.
